Madrid, 20 January – Zinpro brought together leading poultry industry experts in Madrid this Tuesday, 20 January, to hold the “Broiler Carcass and Meat Quality Conference”. The event, focused on operational optimisation and profitability, served as a platform to explore in depth the use of its strategic tool: Perfect Carcass Tool.
Under the premise that “the future of poultry production is built on data”, the technical seminar aimed to identify hidden losses during ante-mortem handling and throughout the entire slaughter, scalding and processing chain in order to achieve maximum efficiency. As Luis da Veiga, Business Manager for Iberia and France, highlighted, the company seeks to “take carcass quality to the next level“, using advanced analytics to detect, quantify and assign an economic value to each loss in the production chain.

A high-level technical programme
The agenda, opened at 10:00 by Juan Manuel Martín-Tereso, featured a panel of international speakers covering topics ranging from on-farm management to the final financial impact.
The first technical session was delivered by Eduardo Cervantes López, who presented on “Ante-mortem management to minimise slaughterhouse issues”, a critical phase for ensuring the final quality of the product. This was followed by Prof. Avigdor Cahaner, who offered an analytical perspective with his presentation “How to collect accurate data and turn it into strategic decisions”, reinforcing the company’s message that data without rigorous statistical analysis leads to poor decisions.
After the coffee break, expert Astrid Verhoijsen focused on industrial processing with her talk “Optimising the scalding–plucking combination”. Finally, Dr. Paco Fernández López-Brea closed the conference programme by analysing the “Financial impact related to carcass and meat quality”, a key topic for the profitability of poultry companies.
Real day-to-day plant challenges were addressed, from ante-mortem practices to scalding and plucking adjustments, and participants analysed how to collect and analyse data in order to make more informed strategic decisions.
The “take-home message” of the seminar was clear: reduce condemnations, optimise carcass yield, improve animal welfare and strengthen the profitability of the integration by controlling the factors involved.
